Taqueria del Vaquero. Mexican street food, cooked on a 1978 step van. Essex, England.

Nobody remembers the chicken. They remember queueing twice, and the bloke carving pork off a spinning trompo while everyone stands around watching. That is what you are actually booking.

A bride and groom stood together at the HoTaco truck at night, eating tacos under the lit TACOS sign.
01Both of them fed. It does happen.
The bride laughing with a guest, both holding plates of tacos in front of the truck.
02Half eleven. Second serve.

03Nobody sat down. Nobody complained.

We do not do a sit down service and we would talk you out of one. The truck works best parked where people can see it, open from the moment the speeches finish, with guests wandering over when they are hungry rather than all at once because a toastmaster said so.

Everything is made on site that morning. The salsas, the pickles, the guacamole. The al pastor goes on the trompo and gets carved to order in front of whoever is standing there. It is the only bit of theatre we do and we do not have to try very hard with it.

04Carved to order.
A frijoles taco with pickled red onion, guacamole and feta.
05The vegetarian one people fight over.
Two guests eating tacos together in the sun, plates in hand.
06Earlier on. Same truck.
